Critic Reviews

“"Offers a great opportunity to learn more from a chef that champions British produce with simplicity and elegance." - Fine Dining Lovers”

'Exquisitely beautiful' - Lauren Laverne, Desert Island Discs, BBC Radio 4

'Offers a great opportunity to learn more from a chef that champions British produce with simplicity and elegance.' - Fine Dining Lovers

'This is one of those cookbooks you'll debate whether to store on a shelf… or on the coffee table. Clare Smyth's food is of superlative elegance and redefines modern British cuisine.' - Andrew Zimmern

'Clare Smyth is as uncompromising in her dedication to perfection as she is in her pursuit to define modern British cuisine. Not often is a chef able to capture the essence of a Michelin three-star restaurant so thoroughly: from its philosophy of 'informal luxury' to the origin stories behind each of its carefully composed dishes. Core will continue to inform our profession for years to come.' - Thomas Keller, Chef/Proprietor, The French Laundry
